This physical method is critical to prevent over-fermentation and ensures that the coffee maintains its desired characteristics. It’s a process that’s as much about tradition and community as it is about quality control. After 12 hours of fermentation, the coffee is carefully sorted, with a particular focus on removing defects, including the potato defect caused by the Antestia beetle. Yonis.

Sitting at 2,250m above sea level, Duwancho produces exceptional washed, natural and special preparation lots. The site was built by Testi in 2021 as a ‘premium’ facility, and selected for its natural advantages – including its high elevation, the surrounding region’s characteristics and access to fresh, clean water. By choosing sites in areas favoured with great growing conditions and paying premiums for properly harvested fruit, Testi ensures they only receive extremely high quality cherry, resulting in outstanding complexity and distinction in the resulting cup.

Duwancho currently employs three permanent staff and around 160 seasonal workers, depending on how busy the season is. During harvest, freshly picked coffee cherry is delivered daily by some 500 independent outgrowers from the nearby kebeles of Duwancho, Chericho and Bare. At the washing station, Testi separates and processes each kebele’s cherry delivery as a distinct lot, providing extra traceability. This ‘premium’ microlot comes a group of 10 farmers who live close to the washing station — the relatively small number of contributing outgrowers adds to the distinct cup quality of this lot.

The majority of the families that contribute to the site farm organically on tiny plots of land, averaging less than one hectare in size. Coffee is their main cash crop and grows alongside food crops of corn, grain and bananas, under the shade of native Birbira, Wanza, and Acacia trees. The average elevation of the farms in this region is very high – around 2,000–2,200m above sea level – and this, combined region’s cool temperatures, is ideal for the slow ripening of coffee cherries, leading to denser beans and a sweeter, more complex cup profile.

This coffee lot was produced as part of Testi’s quality improvement initiative, Premium Cherry Selection (PCS). Launched in 2018, the Premium Cherry Selection program ensures that best practices are used for growing, harvesting and processing the coffee cherry. Through the program, Testi pay a premium to farmers who pick and deliver only the ripest cherries from their farms. Coffees produced as part of the program represent the highest quality and cleanest cup profile available from the washing station and wider region.

COUNTRY

Costa Rica / Region: Valle de Dota

FARMER

Roberto Mata Naranjo, Farm La Pachuca

VARIETY

Caturra

PROCESS
Honey

ALTITUDE
1800 meters

TASTE DESCRIPTION
Tropical bomb, pineapple, whiskey, lakritz. This area holds great historical significance due to the presence of the indigenous Paltas culture, known for its brave resistance against the Inca Empire and its strong agricultural traditions. Today, Puyango is recognized for its specialty coffee production. One of the defining features of coffee farms in this region is their integrated management approach. The use of chemical fertilizers is minimal, as coffee growers typically rely on organic compost made from pruning and pulping byproducts, which are rich in organic material.

On the other hand, Zamora is known for its rich biodiversity due to its proximity to the Amazon Rainforest, famous for its exotic flowers and native bird species. These producers have formed an association, also named Meliponas, dedicated to honey commercialization, providing an additional source of income. The company generates Jobs directly and indirectly to the rural communities through its owned two coffee washing stations and coffee plantations that divided into three estates named Jarama, Kamajumba and Nyaruzina. Kivubelt Coffee Ltd directly employed 22 permanents workers and also between 100-600 casual workers and Season workers. Mrs Kalila Kantengwa is the Managing Director of Kivubelt Coffee Ltd.

Produced by Rainaldi, one of the few dedicated Excelsa specialists, this coffee grows within a vibrant agroforestry system. Fresh mountain water rises from a spring in the meadow, feeding the stream that runs through the land and shaping the farm’s unique microclimate.

This lot is an Anaerobic Thermo Soaked Natural Excelsa. After careful harvesting, the cherries undergo a controlled soak in warm water before fermenting anaerobically, allowing for a slow and expressive development of sweetness and structure. Dried as a natural, the coffee retains its full fruit character while gaining depth and clarity. The result is a cup that highlights the distinctive personality of Excelsa, enhanced by delicate fermentation notes and a syrup-like mouthfeel.

“Si Unyil Manis” is more than a rare species in the cup.
